Shortbread


2 cups all purpose flour
1/2 cup cornstarch
1/2 cup sugar
1 cup cold butter!
1/2 tbsp salt

Preheat oven to 450°. This recipe works best if you don't handle the butter too much, and you must keep it cold! Cut sugar into pieces. Pour sugar on top, and work it together with a pair of knives. In another bowl mix flour, cornstarch, and salt. Mix well, and pour over butter/sugar mixture. Work this together at least 5 minutes with a pastry blender.

Grease and flour a 11"x15" jelly roll pan. Press the mixture into the pan evenly, about 1 inch thick. Put into 450° oven about 30 secons. Take it out and prick holes all over with a fork. Also score it with a knife where you will cut it later.

Bake at 450° for 5 minutes, then turn down the heat to 350°. Bake up to 30 minutes at 350°, checking every 5 minutes. Remove from oven and sprinkle with sugar. Cut while still hot.
